What the sources say
FoodKeeper has two entries that cover zucchini, and their refrigerator times differ: fresh whole zucchini gets 1 week, while the entry for summer squash and zucchini gives 4 to 5 days from purchase.12
Their freezer times are close, 10 months for whole zucchini and 10 to 12 months in the summer squash entry.12
Only the summer squash and zucchini entry covers the pantry, at 1 to 5 days from purchase.2
The Nebraska Extension chart has a row for summer squash or zucchini with the same three numbers: 1 to 5 days at room temperature, 4 to 5 days refrigerated and 10 to 12 months frozen.3
The NDSU Extension food storage guide sides with the longer refrigerator figure of 1 week and also gives 10 to 12 months frozen, but it marks pantry storage of zucchini as not recommended.4
Iowa State University Extension says fresh squash kept in the refrigerator crisper, in plastic storage bags or rigid containers to retain moisture, will maintain quality for 5 to 7 days.5
It also says to wash squash in cold water to remove soil and to handle it carefully, because summer squash bruise easily.5
Properly packaged and frozen, squash should keep high quality for about 10 months in the Iowa State article, and vacuum packaging can extend that shelf life but cannot be used as a preservation method alone.5
Slices are blanched before freezing, 3 minutes in boiling water or 4 1/2 minutes in steam, then cooled in ice water for at least 3 minutes.5
For grated zucchini meant for baking, the National Center for Home Food Preservation uses a short steam blanch of 1 to 2 minutes in small quantities, until translucent, and says to discard any liquid if it is watery when thawed.6
Iowa State notes that the USDA does not recommend canning summer squash or zucchini alone.5
Dried zucchini pieces can be kept in airtight containers in a cool, dry, dark place for up to 12 months, and refrigerated pickled squash should be eaten within 7 days for best quality and safety.5
