What the sources say

The three storage charts agree on the refrigerator: FoodKeeper, the Nebraska Extension chart and the NDSU Extension food storage guide all give fresh cucumbers 4 to 6 days.123

FoodKeeper counts that time from the date of purchase.1

The freezer gets a clear no from all three: FoodKeeper marks it not recommended, Nebraska says cucumbers do not freeze well, and the NDSU guide also marks it not recommended.123

The NDSU guide gives the pantry the same not recommended mark, and neither FoodKeeper nor Nebraska lists a room temperature time.312

The National Center for Home Food Preservation describes what freezing does to cucumbers meant for raw salad: after thawing they are limp and water-logged, and they quickly develop an oxidized color, aroma and flavor.4

It does name one way around this, saying cucumbers can be frozen as marinated products such as freezer pickles, though these do not have the same texture as regular pickles.4

On washing, the FDA uses cucumbers, together with melons, as its example of firm produce to scrub with a clean produce brush.5
