What the sources say

FoodKeeper gives tofu 1 week in the refrigerator, counted from the date of purchase.1

For the freezer, its tofu entry gives 5 months, also counted from the date of purchase.1

Oregon State University Extension separates tofu sealed in liquid in a refrigerated package from a shelf-stable style sold in a sterile container and not packed in water.2

It explains that the date stamped on a refrigerated tofu package is a "best by" date rather than an expiration date, so tofu kept refrigerated and unopened is still safe after that date, though its quality starts to go down.2

Once the package is open, uncooked tofu can go into a clean container, covered with fresh water, and keep below 40 °F in the refrigerator for 3 to 4 days.2

After that it starts to turn slimy or develop a bad odor, and Oregon State says not to use tofu that has changed color, developed a smell or gotten slimy, and that tofu should be creamy white with almost no smell.2

Water-packed tofu can be frozen in its original container for several months, then thawed for 24 hours in the refrigerator or run under hot running water just before opening and cooking.2

Frozen tofu has a different texture from fresh, and Oregon State suggests trying one block before freezing a large quantity.2

Shelf-stable tofu can stay in the pantry without refrigeration and typically keeps good quality for 6 months to a year unopened; once opened, it must be used right away or refrigerated and used within 3 to 4 days.2
