What the sources say

FoodKeeper and the Nebraska Extension chart both split hummus into two kinds: commercial hummus, which is pasteurized and made with preservatives, and traditional hummus, which has no preservatives and is not pasteurized.132

For commercial hummus, both sources give 3 months in the fridge before the container is opened and 7 days after it is opened.12

Traditional hummus gets a single fridge time of 7 days from both sources.32

So the pasteurized commercial product keeps far longer while sealed, 3 months against 7 days, but once opened its fridge time drops to the same 7 days as traditional hummus.132

The Nebraska chart marks both kinds of hummus as not safe at room temperature in a pantry or cupboard, and its hummus fridge times are for a refrigerator at 40°F or below.2

FoodKeeper lists freezing as not recommended for commercial and traditional hummus alike.13
