Handling and freezing notes

  • Refrigeration ensures that commercial sauces and condiments stay fresh for a longer period of time. Shelf-stable commercial salsa is safe when stored at room temperature after opening. Quality, not safety, is the reason the labels on these products suggest that they be refrigerated after opening. FoodKeeper

What the sources say

FoodKeeper groups salsa with picante and taco sauces and gives unopened salsa 1 year in the pantry from the date of purchase.1

Once it is opened, FoodKeeper lists 1 month in the refrigerator, and the Nebraska Extension chart gives the same 1 year unopened and 1 month opened in its row for salsa, picante and taco sauces.12

FoodKeeper also says shelf-stable commercial salsa is safe when stored at room temperature after opening, and that refrigeration keeps commercial sauces fresh for a longer period.1

According to that entry, salsa labels suggest refrigeration after opening for reasons of quality rather than safety.1

Fresh salsa is a separate FoodKeeper product, with 4 to 7 days in the refrigerator.3

Homemade fresh salsa has its own entry with 5 to 7 days in the refrigerator and 12 months in the freezer.4

Salsa canned at home is listed apart from both, with 9 to 12 months in the pantry.5

Of the four FoodKeeper salsa entries, only homemade fresh salsa has a freezer time, and the Nebraska chart gives no freezer time for salsa.13452
