What the sources say

FoodKeeper gives fresh ginger root 2 to 5 days in the pantry, 2 to 3 weeks in the refrigerator and 6 months in the freezer, all counted from the date of purchase.1

Iowa State University Extension gives unpeeled ginger longer at room temperature and in the cold: 1 to 2 weeks on the counter, or 4 to 6 weeks in an airtight container or bag in the refrigerator crisper drawer.21

For the freezer it is shorter than FoodKeeper, saying fresh ginger keeps its best quality for 3 months and stays safe well beyond that, and that ginger kept constantly frozen at 0 °F will keep indefinitely.21

Leftover peeled ginger keeps 2 to 3 weeks in the refrigerator if it is tightly wrapped.2

To freeze it, Iowa State says to scrape the skin, slice, grate or chop the ginger, and put slices in a freezer bag with as much air removed as possible.2

Grated or finely chopped ginger is best frozen in small piles on parchment paper or in ice cube trays before it is packaged.2

The same page gives preserved forms their own refrigerator times: slices covered with vodka or other alcohol keep 1 to 2 months, while pickled ginger and fermented ginger keep up to 3 months.2

Dried ginger will keep for a year when properly stored.2

Molding, softness, discoloration, or an off smell or appearance are the signs of spoilage it lists, and a rhizome showing them should be thrown out.2

Whether the ginger is young or mature, the rhizome should be firm with a light brown skin, and removing the skin is optional.2
