What the sources say

For fresh potatoes kept in the pantry, the sources give 1 to 2 months: FoodKeeper says 1 to 2 months from purchase, the Nebraska Extension chart 1 month, and the National Center for Home Food Preservation up to 2 months in a cupboard at 50 to 70 °F.123

FoodKeeper calls the pantry the recommended storage method for whole potatoes.1

In the refrigerator, FoodKeeper and the National Center both give 1 to 2 weeks; the National Center says the cold is likely to diminish their quality, and FoodKeeper cites the United States Potato Board on potatoes darkening during cooking and developing an unpleasantly sweet taste.13

The Nebraska chart lists 10 to 12 months in the freezer for potatoes, and the National Center freezes new potatoes after a water blanch of 3 to 5 minutes, depending on their size.210

For cooked and mashed potatoes, FoodKeeper gives 10 to 12 months in the freezer, while its leftovers entry, which names potatoes, gives 3 to 4 days in the fridge and 1 to 2 months frozen.14

The National Center is more cautious: mashed, stuffed or scalloped potatoes keep best quality for only a few weeks in the freezer, and baked or boiled potatoes can turn soft, crumbly, water-logged and mealy after thawing.39

Commercial frozen potato products such as fries, hash browns and tater tots get 12 months in the freezer from FoodKeeper, and frozen potato in its original package gets 8 months from Utah State University Extension.67

FoodKeeper says to cook them as directed and does not recommend refrigerating them after cooking, because of decreased quality.6

Instant potatoes keep 10 to 15 months in the pantry unopened and 6 to 12 months after opening.8

Utah State lists 6 months for fresh potatoes kept in ventilated boxes or bags in a moderately moist pit or cellar at 35 to 40 °F.7
