What the sources say

Fresh strawberries get just 2 to 3 days in the refrigerator from the date of purchase in FoodKeeper, and the Nebraska Extension chart lists the same 2 to 3 days.12

Nebraska does not recommend storing strawberries at room temperature.2

The FDA uses strawberries as an example of perishable fresh fruit that belongs in a clean refrigerator at 40 °F or below.3

Iowa State University Extension lists strawberries among the non-climacteric berries and says these are best stored in the refrigerator soon after harvest, kept apart from climacteric fruits.4

In the freezer, FoodKeeper and Nebraska agree on 8 to 12 months.12

The National Center for Home Food Preservation begins with fully ripe, firm berries that have a deep red color, discards immature and defective fruit, and then washes the berries and removes the caps.5

Whole strawberries can go into a syrup pack of cold 50 percent syrup.5

A sugar pack instead mixes ¾ cup of sugar into each quart (1 1/3 pounds) of strawberries, stirred until most of the sugar dissolves.5

Sliced or crushed strawberries are prepared the way whole ones are, then sliced or crushed partially or completely.5
