What the sources say

FoodKeeper's entry for leftovers without meat, fish, poultry or egg names potatoes among them and gives 3 to 4 days in the fridge and 1 to 2 months in the freezer.1

Its entry for potatoes adds a freezer time of 10 to 12 months and says that timeline applies to cooked and mashed potatoes.2

The National Center for Home Food Preservation gives a much shorter freezer time than that 10 to 12 months: it mentions cooking and mashing potatoes as one way to freeze them, but says they keep best quality for only a few weeks in the freezer.42
