Storage times for baking powder by state and place
StatePantry
Unopened 6-18 months FoodKeeper Extension Extension
Opened 3-6 months FoodKeeper Extension Extension
Times assume continuous refrigeration at 40 °F or below. When in doubt, throw it out. Freezer times are for quality: “Because freezing 0° F (-18° C) keeps food safe indefinitely, the following recommended storage times are for quality only.” FDA

Signs it has gone bad

What the sources say

FoodKeeper and the Nebraska Extension chart agree on baking powder: 6 to 18 months in the pantry unopened and 3 to 6 months after opening.12

FoodKeeper counts the unopened time from the date of purchase, and neither source gives a fridge or freezer time.12

Utah State University Extension describes what happens as it ages: baking powder can lose its sizzle, so baked products will not rise.4

It lists this under chemical changes in storage, next to flavor and color changes that occur especially in packages that do not keep out air and light.4

The NDSU Extension food storage guide repeats the same 6 to 18 months unopened and 3 to 6 months opened, and advises keeping baking powder dry and covered.312

Penn State Extension suggests looking for the expiration date on the container and making sure measuring utensils are dry before dipping them in.5

Its freshness test is to mix 1 teaspoon of baking powder with ⅓ cup of hot water: if it foams vigorously, it still has rising power.5
